In case anyone wants to make this, but does not want to wait for a mango to ripen, I highly recommend buying a bag of frozen organic mango chunks. I’ve been defrosting mine on paper towels (to pick up the extra moisture) and then throwing into salsa, salads, curries, etc. It tastes just like fresh and saves so much angst if you get a bad or unripe mango. Try it!
